Macaroni and Cheese seems to be the epitome of comfort food. Filled with oozy cheese and warm pasta—who, in their right mind, doesn’t dream of digging into a giant bowl?

But there’s one problem—the enormous amount of calories and fat. And Melissa from Bless this Mess couldn’t have agreed more. Sure, Macaroni and Cheese is a great weeknight dish (she loves the stovetop version from the America’s Test Kitchen Family Cookbook), but when you can cut over 300 calories and still sustain the same delicious flavors, why not try a lightened up version?

So what’s the magic trick to our calorie-slashing, flavor-saving dish, you say? Melissa reports, “The magic comes from getting rid of the eggs and butter and subbing in corn starch as the thickener. Who would have thought?! Only America’s Test Kitchen I tell you.” And just look her beautiful photograph!
