There’s an Appetizer for That: #ATKQuick Instagram Challenge

In case you haven’t heard, we’re hosting an #ATKQuick Cooking Instagram Challenge! Each week, a winner will take home a copy of our super-speedy, and incredibly time-saving cookbook, The America’s Test Kitchen Quick Family Cookbook. Many of the these recipes require only a handful of ingredients, and all are guaranteed to be on the table in 45 minutes or less. Creamy Spinach Lasagna that bakes in 15 minutes? 3-Hour French Beef Stew in just 45 minutes? We’re talking big flavor, in short order.

Ah, the Super Bowl—considered a National holiday to sports fans and commercial nuts alike. Some throw parties to be surrounded by fellow team supporters, but others gather just for the spread of delicious Super Bowl food. But on a day you want to be part of both the excitement and eating, who wants to be stuck in the kitchen? With these 3 quick and easy appetizers, you’ll be part of all the game-day fun, and your guests will feel like winners no matter the outcome! And if you aren’t hosting this year’s game, these dishes are easy to pack up for a potluck. So pick up some drinks, whip up these appetizers, and share your Super Bowl spread on Instagram! Just remember to scroll to the bottom for details on how to participate in the challenge.


Dip into these quick and easy appetizers

Herbed Ricotta Spread


Mix 2 cups whole-milk ricotta cheese, 6 tablespoons chopped fresh basil, 1/4 cup extra-virgin olive oil, 2 minced garlic cloves, 1 teaspoon grated lemon zest plus 1 1/2 teaspoons juice, 3/4 teaspoon salt, and 1/4 teaspoon pepper together in serving bowl. Top with additional olive oil to taste. Serve with breadsticks, crackers, or thinly sliced rustic baguette. Serves 8.

Jalapeño Poppers


Halve and seed 12 jalapeño chiles. Combine 8 ounces softened cream cheese, 1/2 cup shredded cheddar cheese, 2 ounces minced deli ham, 1 tablespoon lime juice, 1 teaspoon chili powder, 2 minced scallions, and 1/2 teaspoon salt in bowl. Spoon cream cheese mixture into jalapeños, transfer to parchment paper–lined baking sheet, and bake in 350-degree oven until cheese is hot, about 20 minutes. Makes 24.

Queso Fundido


Spread 8 ounces diced monterey jack cheese in shallow 8-inch pie plate (don’t use preshredded cheese). Cook 4 ounces diced chorizo with 1 teaspoon vegetable oil in 12-inch skillet over medium heat until fat begins to render, about 1 minute. Add 1 thinly sliced poblano pepper and 1 small, thinly sliced onion and cook until they begin to brown, about 3 minutes. Sprinkle chorizo-pepper mixture over cheese and bake in 375-degree oven until cheese is just melted, 8 to 10 minutes. Serve with tortilla chips. Serves 6 to 8.

HOW TO PARTICIPATE

Visit the Community Page on The Feed every Tuesday to find the new Quick Cooking Instagram Challenge Theme. Then get cooking, and share a photo through your personal Instagram account, mentioning @TestKitchen and using the hashtag #ATKQuick in your caption. Once you’ve published the photo on Instagram, it’s up to our judges here at the Test Kitchen to pick a winner. Participants will be judged on 25% creativity/artistic ability and 75% originality of their recipe’s photo.

The deadline for entries will be at 11:59 P.M E.S.T. Monday, February 4th, and we’ll be selecting a winner that Tuesday morning. No limit of entries. The challenge is limited to residents of the Continental US who are 18 years and older as of January 15, 2013. The decisions made by the judges at America’s Test Kitchen are final.
