From the vacuum-sealed bright orange cheddar of my youth to fresh buffalo mozzarella floating in brine, I have to admit I love all cheeses. You can go to a grocery store and walk away with a tub of ricotta that was made that day, or a slice of gouda older than some kindergartners. Cheese is such a versatile ingredient that it can be a part of every meal of the day (although you may not want to eat all those meals in the same day).
On Facebook this past week, our fans posted three examples of the many uses of cheese – from polenta to cheesecake. They proved that “cheesy” may be bad when it describes a joke, but is great when it describes a dish.
