You can do anything you put your mind to, although it can help to have a cheesecloth and a recipe from Cook’s Illustrated to help you along. So the next time you decide to make your own cheese, don’t be surprised when this labor that seemed so intimidating is actually (surprisingly) easy. Just don’t tell that to your friends, who will definitely still be impressed.

That’s what Nick from Macheesmo found when he made Homemade Saag Paneer. Warning: as Nick’s eating buddy said, you may also be deemed “weird” for choosing to forgo the Indian take-out menu in favor of homemade cheese. All things – spinach sauce, fresh cheese and a truly edible accomplishment – considered, I’d say it’s worth being weird to eat so well.
