Finding a foolproof and delicious dinner can sometimes seem impossible. Whether you’re running home late from work or crammed into a busy grocery store, becoming inspired for dinner can easily become the most difficult task of your day! This is why I’ve found myself eating the same arugula salad almost every night for the last two years. It’s simple, tasty, and requires very little brainwork on my end. Maybe I need to mix things up, but most nights I don’t even want to think about it. Incidentally, Megan over at Country Cleaver seems to have found a solution for our boring dinner woes! Her gorgeous photos and tasty adaptation of our Baked Chicken Piccata is the most inspiring blog post I’ve seen all week. Plus, she’s discovered the joy of capers, which are absolutely divine additions to many savory dishes.
