Blogger Spotlight: Whoopie Pies

I’ve got a major sweet-tooth that won’t quit. When I was a kid, I used to hide candy underneath the couch, take licks of icing off of spatulas, and sneak bites of cookie dough when my mom wasn’t looking (I’m even eating some left-over peach tart from the Test Kitchen I write this!) I was sneaky about my confectionary consumptions, and I still am. But when I browsed upon TreatsSF’s post about Cook’s Country Whoopie Pies, I realized I couldn’t stay in hiding any longer. No more sneakiness, I just wanted to make myself something that satisfyingly sweet! These treats are small like a cookie, soft like a cake, and smashed around gobs of icing…I’m sold! And apparently, the French have also caught onto these typically American treats. Which makes me wonder, could our Whoopie Pies beat out their Macaroons? From the looks of it, we may have a future bake-off on our hands.
