Blogger Spotlight: Cauliflower in Cheddar Mustard Sauce

Move-over main course! This side dish is stealing your typical spotlight. Meet: Cauliflower in Cheddar Mustard Cream Sauce, a recipe from America’s Best Side Dishes brought to you by Nicole at “Heat Oven to 350.” Yes, it’s a vegetable. Yes, it’s healthy. But Nicole swears this dish is something you will easily fall in love with and want to make over and over again (which sounds like a great option for picky eaters and stubborn kids). Nicole even tells us that she would rather have this cheesy and flavorful dish than macaroni and cheese! And since cauliflower is in replacement of the pasta, this dish loses about half the carbs while gaining more nutrients. I think this sounds like a winning dish, whether it’s a side or stealing center stage.
