Ashley Moore is a test cook on the books team. She loves Pepe's Clam Pie, Land O' Lakes white American cheese (thinly sliced), and scooped out bagels. When not at work, she can be found trying to cuddle with her adorable bulldog Olive and husband Jon.
Caramel frosting is delicious-rich and toffee-flavored, this unique frosting starts out creamy but quickly firms up to a fudgelike consistency. It is also notoriously tricky. Our goal was an easier, foolproof caramel icing that would bring this cake back into every baker's repertoire.
With our test kitchen know-how (and relentless testing) we found ways to make naturally fast dishes faster, and traditionally slow-cooked dinners a weeknight option. But one thing we never did was settle on shortcuts that shortchanged flavor.
