Test Kitchen Snapshots

Taking Time Before Baking Time

When you've got multiple desserts to make, preparation is key.

Photo team associate editor Chris O’Connor, surrounded by stacks of meticulously portioned baking ingredients, measures out cream of tartar into eleven small plastic cups while getting a jump start on a video shoot involving eleven (yes, eleven!) batches of our recipe for Fluffy Yellow Layer Cake with Foolproof Chocolate Frosting. Measuring out every ingredient ahead of time (even these pinches of cream of tartar) helps: this way, when the day of the shoot arrives, the photo team test cooks can jump right into baking without worrying about having to get their prep done.

Steve Klise is a photo editor at America's Test Kitchen. When he isn't running the Test Kitchen Snapshots section of The Feed, drooling over pictures of food while directing shoots for Cook's Illustrated and Cook's Country, or trying to stay out of the way while taking photos in the Test Kitchen, you can find him scurrying around his own kitchen, relaxing in one of Boston's waterfront parks, daydreaming about great barbecue, or stuck in traffic jamming out to Springsteen with the windows down.
