Stashing Away Sweet Potatoes

What to do when you've got a surplus of experimental spuds? Share the love, of course.

    Cook’s Illustrated assistant test cook Celeste Rogers starts packing leftover samples of twice-baked sweet potatoes into clamshell-style containers after a recipe tasting. Now that this spread of fluffy orange goodness has been judged for the purposes of recipe development, it’ll be packaged up and offered to our employees via the so-called “take-home fridge” in the test kitchen.

      Ooh cool, I got to do the home testing of these. Everyone liked them and I think they’re better than twice baked regular potatoes. :)
