Cook’s Illustrated associate editor Andrea Geary places an experimental turkey-roasting rig (whole breast in skillet, legs removed, everything set on a wire rack in a rimmed baking sheet) in the oven after checking its temperature. Wait, wasn’t Thanksgiving three weeks ago? Indeed it was – but due to our publication schedule, we’re already working on next year’s featured turkey recipe. Just goes to show: there truly is no rest for the weary recipe developer.
