When working on an outdoor recipe, getting food to tastings can be a hustle.
Cook’s Illustrated associate editor Andrew Janjigian looks for a place to set up a tasting as he hurries from his outdoor grilling station through the test kitchen bearing trays of different preparations of kofta kebabs (a dish of ground lamb or beef popular from Turkey to India and everywhere in between) during development of a recipe to be published next year.
