Careful Cake Construction

When you can't bake right on the serving platter, achieving perfect presentation can be a balancing act.

    Test kitchen cakes and baking specialist Erika Bruce carefully moves a whole After Eight Cake (a large-scale version of its namesake after-dinner mint) from the wire rack upon which it was constructed to a cake stand while preparing for a photo shoot for an upcoming issue of Cook’s Country, as extra cake components (chocolate ganache, sheet cakes and mint buttercream filling) stand ready in case a second version of the cake is needed.
