Amassing a Massive Mechouia Mise

We're getting all our veggies in a row before testing an unfamiliar salad.

    Surrounded by a vast variety of veggies, Cook’s Illustrated assistant test cook Celeste Rogers opens a large container of coriander seeds as she gets her mise en place ready ahead of a test of three different recipes for mechouia, a north African grilled vegetable salad currently being studied for an upcoming issue of Cook’s Illustrated.
