No embargo can stop us from working on our version of a classic Caribbean dish.

    Cook’s Illustrated senior editor Keith Dresser, associate editor Andrea Geary and senior tastings and testings editor Lisa McManus line up for a five-recipe tasting of vaca frita, a Cuban dish of fried shredded beef (and sometimes vegetables), as part of the development process for an upcoming feature. (And of course, what would such a tasting be without a side of rice and beans from the Dutch oven at bottom left?)
