A great miso soup requires a great broth, which often means hunting down obscure ingredients. To get a broth with the same complexity and earthy, briny flavor without a special shopping trip, we created a flavor-packed base with shiitake mushrooms, ginger, soy sauce, and sesame oil. Supermarket ramen noodles (minus the seasoning packets) ensured that our miso soup was filling and were tender in a matter of minutes.
