Since natural gas combustion produces water vapor and the oven temp for this is so low, is there an issue getting the meringue cookies to bake and dry properly in a gas oven? Any adjustments that need to be made?
Hi sharksfan7, here’s an answer from the cooks: There shouldn’t be any problem with a gas oven. It’s true that gas combustion produces water vapor, but this moisture (along with the water already in the meringue cookies) is able to escape through the oven’s ventilation system. To prove the point, we often use gas ovens at very low temperatures to effectively dehydrate high moisture fruits like tomatoes.
My meringues seem to be weeping while baking in the oven. What did I do wrong? =)
Hi sherymonahan, if you need some extra defense against weeping, try mixing 2 teaspoons of cornstarch in with the sugar, and then bake as directed. Let us know how it goes!
