If I substitute potatoes with elbow pasta – would it make good mac + cheese? I am not a big fan of mac + cheese (the flavor is too blend for me) but, this recipe would make mac + cheese bolder… Am I mistaking?

Am anxious to try it. Sounds like it would also travel well—-covered w/foil and wrapped for travel. We have had good luck wrapping dishes like this in newspaper (obviously after covering w/foil.)

Hope I am able to find the shredded hash browns. If not, are the other hash browns acceptable?

Ann, The timing and liquid measurements in this recipe are worked out for the shredded hash browns. I have a feeling you will be able to find them in the frozen foods aisle. If you absolutely can’t find the shredded hash browns and decide to try the cubed ones, just use the cue “until thawed” in step 2, rather than relying on the time. You may find that the sauce to potato ratio is a bit off if you use the cubed potatoes. Check in and let us know how it turns out. Cheers.
