Spreading a mixture of sugar and butter onto pork chops before grilling to promote a quick caramelization.

HOW THIS QUICKIE WORKS

  • A smoky blend of sugar, butter, paprika, salt and pepper is rubbed on the meat to ensure a rapidly charred surface within a minute or two on the grill
  • After the chops are cooked, they’re topped with a seasoned paprika-and-garlic butter that provides moisture and flavor
  • To complement the smoky-sweet chops, a bright salad of hearts of palm, roasted red peppers, and watercress comes together quickly and is served alongside
