My favorite so far is pork tinga
Unclear whether you mean ATK recipes or just recipes in general, but my all-time favorite has got to be my mom’s chocolate pie. And for ATK recipes, I love your granola and make it at least twice a week.
This makes me want to be a test cook SO BADLY!
What type of degrees and experience does the ATC family have? i.e. If one of my children wanted to grow up and be just like you guys, what would you direct them to do, as they are graduating high school, to go down that career path?
Hi Jen, great question. Our test cooks have very diverse backgrounds, but all of them went to culinary school and have several years of restaurant experience. They also have to be good writers. We have a blog series called “Meet the Kitchen” where we asked the test cooks to tell us about their culinary backgrounds. Lasagna!
I am a huge addicted fan of Cooks but my all time favorite recipe is chicken piccata and I made 80 chickens for a rehearsal dinner using this golden recipe. I love it because it is very lemony and does not use white wine. Nothing wrong with white wine but I like the fact that all the flavors are bright without using any wine. I started thinking piccata was a verb..because you can piccata anything as I often do such as broccoli, pork tenderloin, shrimp, talapia, scallops, lobster & on and on.
Right now, my favorite recipe is the Grammercy Tavern Gingerbread from Epicurious.com. It includes Oatmeal Stout, which my husband homebrews for me just so we can have gingerbread all winter.
I love a good old fashioned kugel
It’s a toss-up between Epicurious’ Apple Ginger Bourbon Pie, and my sister’s Cherry Almond Pie.
My all-time favorite is Mom’s Potato Salad (doesn’t everyone love their mom’s the best?). Warm potato cubes absorbing Hellman’s Mayo + French’s Mustard (yes, brand counts in this) and onion juice (plus a few shakes of Frank’s Red Hot I’d sneak in when she wasn’t looking!). Add chopped bell peppers, and whatever other crunchy you like, and a TON of black olives! mmmmm! Even though I know the recipe, I still can’t exactly duplicate hers (and my 3 sibs each put their own spin, too). Nothing better in summer with a ham dinner! Or, leftover for breakfast! From ATK, well, hard to chose one! I remember good roasted tomato sauce/gravy – so yummy! And, of course, any fool-proof pork roast!
