All the drizzling, whisking, and pouring involved in homemade mayonnaise can make you wish you had a third hand to help with the preparation. To simplify the process of drizzling oil while whisking together egg yolk and lemon juice, punch a small hole in the bottom of a paper cup. Whisk the egg yolk and lemon juice together and set the bowl on a damp towel to stabilize it. Pour the oil into the cup while holding your finger over the hole, then hold the cup above the bowl and remove your finger to let the oil drizzle in slowly as you whisk.
Frugal shoppers often buy cooking oil in 1-gallon cans, which are bulky to store in the cupboard and are especially difficult to pour. To make storing and pouring more manageable, transfer the oil to a clean plastic syrup container or sports water bottle with a flip top or pop-up spout.
If you don’t have cupboards tall enough to fit both the bottle of oil and a pour spout, here’s an easy way to get just a splash of oil from the bottle without using a spout. Remove the plastic cap from the oil and poke a small hole through the safety seal under the cap with a paring knife. Replace the cap and store as usual.
