HOW WE GOT THERE
- Mushroom fillings usually get a flavor boost from sausage or bacon, which add richness but overwhelm any real mushroom flavor. Instead of employing a calorie-packed base of meat, we filled our stuffing with chopped mushrooms, which we sautéed to cook off excess liquid.
- Grated Parmesan added a nice sharp contrast to the woodsiness of the mushrooms—and because of its concentrated flavor, we didn’t need to use very much.
- Many traditional stuffed mushroom recipes use as much as a full cup of breadcrumbs to bind the filling. But because we had such a mushroom-rich stuffing to begin with, we could get away with half of that amount.
