HOW WE GOT THERE

  • Some light guacamole recipes replace some of the avocado with another plant-based ingredient. This was the right idea—as long as you choose the right one. We found that frozen lima beans complemented the avocado in taste and texture amazingly well, especially after we boiled them. This muted their distinct beany flavor and made them super creamy.
  • To make our dip more cohesive, we added a bit of reduced-fat mayonnaise. It was subtle enough flavorwise and provided just the right amount of silky creaminess.
  • We also found a way to extend the dip without costing us unwanted calories: folding in a chopped tomato. It gave the dip some added heft and added some acidity to balance the flavors.

    Hi Maria, thanks for your sharp eye! It is indeed frozen lima beans. (They even beat out canned white beans in our testing!)
