HOW WE GOT THERE
- Research recipes’ imaginative ingredient substitutes taught us the dangers of that approach. (Swapping the mayonnaise for a mixture of cottage cheese and apple juice concentrate? Tasted as bad as it sounds.) So we found more conventional alternatives, like reduced-fat mayo and low-fat plain yogurt.
- Once we had our creamy base, we used potent ingredients like cilantro, dill, and garlic to lend our dressing pungency and depth.
