Mallomars, the popular supermarket cookie, are graham crackers topped with marshmallow and then covered in chocolate. Portable s’mores? Count us in. But what’s the only thing better than store-bought portable s’mores? Homemade ones, of course. You might think that making cookies comprised of sticky marshmallow fluff enrobed in melted chocolate would be a messy proposition, but we developed a Test Kitchen technique that makes the dipped-in-chocolate part of the recipe as easy and neat as possible.
1. The Marshmallow Fluff-topped cookies are briefly chilled, uncovered, in the freezer until Fluff is firm—this makes the application of chocolate easier. Working with 1 cracker at a time, use a fork to hold it over bowl of melted chocolate and use a spoon to coat the top and sides completely with chocolate, letting the excess chocolate drip back into bowl.
2. Carefully place the chocolate-coated cookies back on the greased wire rack set over a parchment paper-lined baking sheet to catch any extra drips.
